The Black Stump is set in one of Mildura’s oldest and most iconic venues, The Settlers Club.
Chef Jim McDougall was born and raised in Mildura, where he developed a passion for cooking and local produce.
Jim began his culinary training at SuniTAFE, where he was named the inaugural winner of the Chefs of the Future competition and Apprentice of the Year. He completed his apprenticeship under Stefano de Peri at the Grand Hotel restaurant group.
Jim moved to Melbourne in 2006 to work at three-hat restaurant Vue de Monde under Shannon Bennett, where he worked for three years cooking for elite clientele including Gordon Ramsey, Rod Stuart, Jamie Oliver, Heston Blumenthal, John Cleese, Michael Roux and many others. In that time he was promoted three times, ending his stint at Vue de Monde as sous chef.
He was then promoted to head chef of Bennett’s new restaurant 401 St Kilda Road, which was a café, bakery, restaurant and patisserie. Which he ran for another two years
He returned to Mildura in 2011 and took over as head chef and manager of Stefano’s Restaurant. The two wrote a book together entitled “Nuovo Mondo” (new world). Under his direction, the food evolved over the next three years from Stefano’s rustic Italian fare, to his own contemporary menu. The name of the restaurant changed in 2014 to Jim McDougall in Stefano’s Cellar to reflect the changes. Under its new name, the restaurant was named Regional Restaurant of the Year and awarded two hats by The Age Good Food Guide 2015.
Jim moved on from Stefanos in 2015 to focus on the Black Stump Bistro, the first of which opened in Mildura in 2013. They serve simple, classic bistro food influenced by Australian, American and European cooking styles using wild/native and local produce from the Mallee area.
Jim McDougall is an advocate for everything local. He has appeared on the likes of Landline, Master Chef and Postcards to name a few. He continues to work closely with local businesses and participate in many local events.
